Mateo Chávez García came up through the Guadalajara academy and made his Liga MX debut against Santos Laguna in January 2024, going on to become a regular starter for the club in the 2024/25 season. That run of appearances led AZ Alkmaar to announce his signing in May 2025, with the move to the Eredivisie taking effect that July for a reported fee of €2 million; Guadalajara kept a sell-on clause of between 40 and 50 per cent. At AZ he has featured for both the first team in the Eredivisie and Jong AZ in the Eerste Divisie.

His international career moved quickly. After representing Mexico's under-23 side in 2024, Chávez earned his first senior caps in 2025, appearing in friendlies before being included in the squad that won the CONCACAF Gold Cup that year. He scored his first goal for the senior national team at the 2026 World Cup, in a match against the Czech Republic, and by the middle of that year had made 12 appearances for Mexico.

The move to Alkmaar has also brought silverware at club level: Chávez was part of the AZ squad that won the 2025/26 KNVB Cup and the 2026 Johan Cruijff Shield, adding to the Gold Cup he collected with Mexico.
