His move to Montpellier a year later, on a free transfer, was described by some in the French press as a "stealthy" piece of business — a sign of how little noise it made at the time compared with what followed.

He worked through Montpellier's reserve side first, scoring four goals in 32 appearances for the B team, before making his Ligue 1 debut against Le Havre in August 2023. His first professional contract did not arrive until the following March, backdated to start that July.

International recognition came with France's under-20 side, for whom he was capped three times in 2024. That year also brought the Maurice Revello Tournament in Toulon, cut short by an internal ligament sprain in the knee sustained against Mexico, which ended his involvement in the competition.

Mincarelli left Montpellier in July 2026, signing a three-year contract with Portugal's Estrela da Amadora that runs until June 2029.
