Before a prolific 2022 season with Atlético Perú, in which he scored 28 goals in 23 matches in the Liga Escobarense, pointed him towards a professional contract.

That move came in 2023 with Deportivo Municipal, where he made his professional debut in February and finished the season with 11 goals in 28 appearances, though the club was relegated. He signed for Deportivo Garcilaso in December 2023 on a free transfer. Across 2024 and 2025 he scored 24 goals in 65 appearances, including a run of 15 goals and eight assists in 31 matches in 2025 that placed him fifth in that year's Liga 1 scoring charts. In October 2025 he became Garcilaso's all-time leading scorer in the professional era, overtaking Santiago Giordana with 23 goals in Liga 1 and Copa Sudamericana combined. He was also the club's top scorer in the 2024 Copa Sudamericana, with four goals.

Erustes joined FBC Melgar on a free transfer for the 2026 season. His time at the club was brief: 14 appearances and a single goal, most of it in the Liga 1 Apertura, before his contract was ended early in the middle of the year. He then moved to Sport Boys in June 2026, again as a free agent, continuing his career in Peruvian football away from Melgar.
