Uruguay reached the final of the 2013 FIFA U-20 World Cup with Olaza in the squad.

A season at Danubio brought six goals in 27 games and, in July 2017, a move to Argentina: Talleres bought 70% of his rights. Boca Juniors took him on loan in August 2018 and made the deal permanent the following January. He was in the Boca squad that reached the 2018 Copa Libertadores final.

Celta de Vigo, where he had played for the reserves, took him back on loan from Boca and he made 63 appearances there. Real Valladolid signed him on loan in 2021 and bought his rights that July; between then and 2023 he played 34 matches for the club, with a short loan at Elche in 2022.

Krasnodar paid a reported €2.5 million for him on 6 August 2023, on a two-year contract with an option for a third. He has since made 85 appearances and scored four goals, and was part of the side that won the Russian Premier League in 2024–25; runners-up medals followed in the Russian Cup and the Russian Supercup. His senior international career arrived late — seven caps, six of them in 2024 — and he was in the Uruguay squad that took bronze at the 2024 Copa América.
