The club's colours (Toro Black, Matador Red and Dust Storm Cotton) were chosen to sit alongside the Texas Tech palette.

Owner Michael Hitchcock's team was announced as a National Premier Soccer League (NPSL) expansion side on 14 December 2021 and played its first season in 2022. The club won the Lone Star Conference regular season in 2023 and the conference championship in 2025. In between came the 2024 U.S. Open Cup, where the Matadors beat Arizona Monsoon FC and Foro S.C. and went out in the third round to New Mexico United.

The supporters' group, the Mozos, has a fixture of its own to follow. West Texas FC is the local rival, and the two meet in "El Dustico", also billed as the West Texas Showdown, for the Golden Tumbleweed trophy.

David Ormiston is the current head coach, after Paul Gilbert. The Matadors are scheduled to move up to USL League Two for 2026.
