Taty Castellanos scored the opening goal in the 2021 MLS Cup final, and New York City FC went on to lift the trophy. The forward from Mendoza was in the middle of the best season of his career. He finished it as the MLS Golden Boot winner with 19 goals, level with Ola Kamara but ahead on assists. He was also named in the MLS Best XI and was Player of the Month in August.

The route to that final was not a straight one. Castellanos began at Universidad de Chile and made his professional debut in the 2017 Copa Sudamericana. That July he went on loan to Montevideo City Torque, where he helped the club win the Uruguayan Segunda División and earn promotion. Torque took up their option to buy him in mid-2018, and later that year he moved to New York City FC on loan for a fee of about €200,000. The deal was made permanent in November 2018.

In July 2022 he joined Girona in La Liga on loan and scored 12 goals in 31 matches in 2022–23. Lazio signed him permanently on 15 July 2023 for a reported €15 million plus incentives. He made 98 appearances for the Rome club and scored 22 goals.

In January 2026 he left for West Ham United, reportedly for about €30 million, on a contract running until 2030.

With Argentina's Olympic team he won the CONMEBOL Pre-Olympic Tournament in 2020. His senior debut came on 5 September 2024 against Chile, and by late 2024 he had two caps.
